Serious Quadruple Chocolate Chip Cookies

May 3rd, 2013 · No Comments

Prepare yourself for some of the most ridiculous chocolate chocolate chip cookies ever!

I read an article a while back about how organic all natural coconut sugar was better for you than white cane sugar. So, of course I had to try it. Well after searching a bunch of grocery stores I finally found it. (Although now I can’t remember which one…lol) Then it sat in my pantry for about 6 months…seriously. Recently, I found this Jamaican jerk seasoning I just had to try on chicken breasts. It called for white sugar, OH WAIT! I’ve got that coconut sugar in the pantry…upon opening, the smell was fabulous! My hunnie said, “that would be awesome in homemade chocolate chip cookies”. Thus the search for a scratch recipe began, except I one uped him for the norm. chocolate chip cookie and added this twist…

1 cup/1 stick Land O’lakes olive oil & sea salt butter, softened not hot & melted

2 – large brown fresh farm eggs

1-1/2 cups of Madhava Organic Coconut Sugar

2 tsp. pure vanilla extract (not imitation)

2 cups all purpose flour or sub:1 cup whole wheat flour & 1 cup all purpose

2/3 cup of cocoa powder  (no sugar added)

3/4 tsp. baking soda

1/4 tsp. fresh ground organic sea salt

1 big handful of Nestle Semisweet Chocolate chips

1 big handful of Nestle Dark Chocolate chips

1 big handful of Nestle Milk Chocolate chips

Preheat oven 350 F (175 C)

Mix butter, coco sugar, eggs & vanilla till fluffy. Combine flour, cocoa, baking soda and salt, blend together. Mix in chips & place teaspoons of dough on cookie sheet.

Bake 8-10 mins. I like my cookies soft with a little crisp to the edges. Watch for the middle of the cookie to look semi-wet to slightly dry.

A little healthier cookie, doesn’t get much better than this. Enjoy!
